What Doesn't Actually Happen in a Controlled Production Environment

Here's where the allulose reputation gets exaggerated. We've heard brands worried that allulose will "pick up flavors from the room" or absorb ambient odors during production. Let's address this directly.

In a production environment like Overgang's, the powder is in open air for seconds — not hours. The sequence is: blend arrives sealed → hopper loaded → auger doses into pouch → heat seal closes the pouch. The exposure window is measured in fractions of a second per fill cycle.

The "picks up room flavor" concern is valid in storage and transit scenarios — open bags of allulose sitting near strong-smelling products for extended periods. It is not a meaningful concern in a properly run production environment where the product goes from sealed container to sealed pouch in seconds.

What Happens When Allulose Is in a Blend

A clumped, partially caked allulose ingredient is going to cause more problems on the machine than fresh, properly stored material.

Blend storage between blending and filling

COA moisture content

Check your allulose COA for moisture content. If the ingredient has picked up moisture in transit or storage, the moisture content reading on your COA will show it. Elevated moisture in an allulose ingredient is a signal to discuss with your co-packer before the run.

Know your other hygroscopic ingredients

If your formula combines allulose with other hygroscopic ingredients — certain fiber blends, some flavor systems, freeze-dried components — the cumulative hygroscopic behavior of the blend can be more significant than allulose alone. Tell your co-packer the full ingredient list, not just the allulose inclusion rate.
